Assyrtiko

Assyrtiko is one of Greece’s most versatile and esteemed white grape varieties. Remaining true to tradition, Santorini Vinsanto wines are meticulously produced. Following appellation laws, they are predominantly composed of at least 50 percent Assyrtiko, complemented by nuances of Athiri and Aidani. Post-harvest, the grapes luxuriate in the summer sun for one to two weeks, undergoing a gentle air-drying process. Afterward, they begin a slow fermentation process, followed by extended barrel aging, resulting in a rich, amber-hued elixir that captivates the senses.
